Peanut Butter Granola Cups
This is another one of our quick and easy, tasty snacks that you are going to love. All you need is a saucepan, there is no baking involved, so why not get the children involved in making these peanut butter granola cups. They are a great energy boost.
Preparation time: 10 minutes
Cooking time: 10 minutes
Chilling time: 10 minutes
Makes 12-15 individual cookies, depending on how generous you are when making them.
Ingredients:
*375g cups granola
*150g peanuts-chopped
*3 Tablespoons smooth peanut butter
*3 Tablespoons honey (or more if needed)
Filling:
*150g smooth peanut butter-melted
Topping:
*200g dark chocolate-finally chopped
*1 Tablespoon coconut oil
Instructions:
*To make the peanut butter granola cups, take a bowl and combine the granola, chopped peanuts, peanut butter, and honey. If the mixture is too dry add more honey to get the mixture to hold together.
*Grease a cupcake tin and divide the mixture into 12-15 cups, depending on how big you want them. Press the mixture down well, so it holds together and then make a dent in the centre of each cup (this is for the peanut butter). Freeze for 5-10 minutes, until the cups are firm.
*Then, melt the peanut butter and pour it into the centre of each granola cup. Now, freeze again for another 5-10 minutes, until firm.
*Finally, melt the dark chocolate and coconut oil and spoon melted chocolate on top of peanut butter. Chill until chocolate has set.
Notes:
These peanut butter granola cups are best served chilled. They will become soft and sticky at warm temperatures!
